This 2005-vintage rum from Habitation St Etienne has been aged for seven years in American oak barrels, before spending a further six months finishing in Pedro Ximnez casks. This creates a sweet, fruity nose with notes of caramel and prunes mingling with delicate woody, floral notes. The palate is smooth and sweet; dried dates and liquorice mingling with honey and tobacco.
