The wine has undergone a wild yeast ferment in 1/3 new French oak puncheons with no additions made.no enzyme, yeast or acid. The following Spring it went through a full malo lactic fermentation. This wine has spent a total of 2 years on gross lees to enhance texture and natural stability.
